Paleo Pumpkin Pancakes

Pancakes, cakes, crepes ... we call them as we want, but what we will agree on is that they are delicious.

It's easy to do and does not require much time, so you can eat for breakfast, snack or anytime!

It is one of the recipes that I recommend in the first week of detoxification of sugar, as it is quite sweet taste to the palate. I advise you to use a banana to sweeten the mix more, instead of honey or agave syrup. In addition, we give a greater contribution.

Ingredients:

- 4 eggs, beaten
- 1/2 cup pumpkin puree

- Optional A:
1-2 tablespoons of coconut flour
for consistency a little firmer or thicker. If you use it, I recommend slowly sifting the wet ingredients to combine well.
2 tablespoons butter or coconut oil, melted
1 teaspoon pure vanilla extract

- Optional B:
2 tablespoons honey or agave syrup (if you're doing the detoxification of sugars, do not use this as an option)
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon allspice / nutmeg
Pinch of salt (optional)

Preparation

Beat eggs, pumpkin, pure vanilla extract and agave syrup (or honey) all together. Put the spices and baking soda to the wet ingredients.
Put 2 tablespoons of coconut in a large skillet over medium heat. Then mix coconut oil in the dough.
grease the pan and with a spoon pour the mixture into the pan to make pancakes of desired size. When some bubbles appear, flip the pancakes and finish cooking.
Serve with a little cinnamon or sliced ​​bananas. Or with what you dare!

Twist:
Instead of adding agave syrup or honey to sweeten this paleo pumpkin pancakes recipe, add a whole ripe banana puree to the mix.
